Based in Les Sables-d’Olonne since 2018, chocolatier Vincent Vallée—crowned World Chocolate Master in 2015—has quickly established himself as one of the leading names in French pastry. Initially focused on chocolate making, he expanded his offerings to include high-end pastries, driven by the success of his now-famous “Saturday cake.” The rapid growth of his business and the opening of a second location have led to a significant ramp-up in production: several hundred individual creations are produced each day during the summer season.
Faced with this growth, the chef needed to find a way to scale up production without compromising the artisanal quality of his products, while maintaining the consistency, precision, and creativity for which his establishment is renowned.
